Roti John at Home: The Egg and Minced Meat Baguette Bazaar Favourite

Roti John at Home: The Egg and Minced Meat Baguette Bazaar Favourite

Roti john is pure Malaysian street food creativity: a long baguette is split, coated with a spiced egg and minced meat mixture, then pressed face down onto a hot griddle until the topping sets into a golden omelette. It is finished with chilli sauce, mayonnaise, onions and salad, then cut into pieces to share. You will see it at nearly every Ramadan bazaar and many night markets.

At home it takes about 20 minutes and a large frying pan.

Ingredients (2 long baguettes, 4 to 6 servings)

  • 2 long baguettes or 4 hot dog buns
  • 250 g minced beef or chicken
  • 4 eggs
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 1 red chilli and 2 spring onions, finely chopped
  • 1 teaspoon meat curry powder
  • Half a teaspoon black pepper, salt to taste
  • Butter or margarine for the pan

To finish: chilli sauce, tomato sauce, mayonnaise, shredded lettuce or cabbage, sliced tomato, sliced cucumber, cheese slices (optional).

Step-by-Step Method

  1. Heat a little oil in a pan and cook the onion and garlic until soft. Add the minced meat and curry powder and cook until no longer pink, breaking up the lumps. Season with salt and pepper and let it cool slightly.
  2. In a bowl, beat the eggs and stir in the cooked meat, chilli and spring onions.
  3. Cut each baguette in half crosswise so it fits your pan, then slice each piece open lengthwise without cutting all the way through, or cut fully in half if you prefer open-faced pieces.
  4. Melt a knob of butter in a large frying pan over medium heat.
  5. Pour a portion of the egg mixture into the pan in a shape roughly the size of your bread.
  6. Immediately press the bread, cut side down, onto the egg. Press firmly with a spatula for 1 to 2 minutes until the egg sets and sticks to the bread.
  7. Flip and toast the crust side for 30 seconds.
  8. Drizzle with chilli sauce, tomato sauce and mayonnaise. Add lettuce, tomato, cucumber and cheese. Cut into pieces and serve hot.

Press the bread onto the egg while it is still runny. If you wait until the egg sets, it will not stick and the topping slides off.

Picking the Right Bread

Bazaar sellers usually use a long soft roll rather than a hard French baguette. The soft type soaks up the egg and is easier to bite. Supermarket "roti panjang" or sub rolls are ideal. If you use a crusty baguette, slice it a little thinner so the crust does not overwhelm the filling.

Day-old bread works well here, as the egg mixture and butter bring it back to life.

Fillings and Variations

  • Sardine roti john: mash canned sardines in tomato sauce with onion and chilli instead of minced meat. Cheap and very tasty.
  • Chicken floss or sausage: slice sausages thinly and mix into the egg.
  • Cheese pull: lay a slice of cheese on the bread before flipping so it melts into the egg.
  • Vegetarian: use finely chopped mushrooms, mixed vegetables and extra onion.
  • Spicy: add cili padi to the egg and a spoon of sambal on top.

Serving for a Crowd

A little planning makes roti john easy to scale. Cook the minced meat in one big batch and divide the egg mixture into jugs, one per two loaves, so you never over-mix it. Keep cooked pieces warm on a tray in a low oven at around 100°C while you finish the rest, and add the sauces and salad only at the last moment so the bread stays crisp. One baguette usually feeds two or three people as a snack.

Roti john is perfect for buka puasa at home, kids' parties and casual gatherings. Prepare the egg and meat mixture in advance and keep it in the fridge, then cook the bread to order. Set out the sauces and salad so everyone can finish their own piece.

FAQ

Can I make roti john in an oven?

You can spread the topping on the bread and bake it at 200°C for about 12 to 15 minutes, but the pan method gives a better omelette crust.

Why does the egg mixture leak everywhere?

The pan may be too large for the amount of egg, or too hot. Pour a shape just the size of the bread and keep the heat at medium.

Can I prepare it ahead?

The filling can be made a day ahead. Roti john itself is best eaten straight away, as the bread softens as it sits.

Roti john is messy, generous and fun, which is exactly why it has stayed a bazaar favourite. Make it at home once and you will find excuses to make it again.
